Bubble and squeak fingers

Makes 12 fingers

1 cup smashed pumpkin and sweet potato

1/2 cup peas/shredded cabbage

1 cup diced cooked lamb

1 egg

salt and pepper

1 cup Panko breadcrumbs

1 tbsp olive oil

Preheat the oven to 200C. Place the smashed pumpkin and sweet potato in a bowl with the peas and cabbage, lamb and whisked egg, salt and pepper and stir until it forms a stiff amalgamated mixture. In a separate bowl mix the breadcrumbs and oil together. Roll the lamb mixture into 12 little sausages the size of a chipolata then roll them in the breadcrumbs. Place the fingers on a lined tray and bake for 20 minutes. To serve, mix half a cup of good quality mayonnaise with a tablespoon of sriracha sauce.
