Banana and coconut bread

Makes about 12 slices

1 1/2 cups plain flour

1 tsp bicarbonate of soda

1 tsp baking powder

1 tsp ground cinnamon

1/2 cup organic coconut flakes

3 big ripe bananas, mashed

140g melted butter

1 cup brown sugar

2 big eggs

1/2 cup low-fat yoghurt

2 tbsp coconut flakes for topping


Sift the flour, bicarb, baking powder and cinnamon into a big bowl. Add the coconut flakes and banana, combining well. Whisk the butter and sugar together. Then whisk in the eggs and yoghurt. Fold this mixture through the flour mixture. Pour into a greased loaf tin about 20x12cm lined with baking paper. Sprinkle over extra coconut flakes. Bake at 160C for an hour.
