Long Table gets Taste of Peru

GUESTS at this year's Chefs' Long Table Lunch will be introduced to the flavours of Peru thanks to Lighthouse Beach Resort chef Manuel Perez.

Mr Perez, a Peruvian who moved to Bunbury five years ago, is excited to share the cuisine he grew up on with the people of the South West.

On the starters' menu will be a potato mash dish called causa, a localised take on ceviche which is traditionally made with raw fish and a chicken and rice dish called arroz con pollo.

A chilli and chicken dish named aji gallina will be Mr Perez's contribution to the mains' menu.

Mr Perez said that while planning his contribution to the menu he decided to include flavours from his home.

"I thought why not do something Peruvian," he said.

"I'll combine it with local ingredients.

"I am introducing to someone the idea of Peru and going there and eating there."

Mr Perez said he had included some Peruvian flavours into dishes served at Lighthouse Beach Resort.

The lunch would be a great opportunity for people to try Peruvian food while contributing to a fundraiser that would benefit South West charities and organisations.

Mr Perez volunteered his services at the lunch in 2012 and said he was pleased to return.

"It is a good cause and a good event," he said.

"The thing that we're doing is going to benefit something and a lot of people are going to have a special day."

The Chefs' Long Table Lunch will take over the Pat Usher Foreshore on February 22.
