Sybil’s Sponge cake

Beat the egg whites until soft peaks form. Then gradually add the sugar. Next fold through the egg yolks. Into another bowl, sift the custard powder, flours, cream of tartar and bicarbonate of soda three times. Very gently, fold the egg mixture through the flour mixture. Grease two 20cm cake tins and spoon in mixture. Bake at 180C for about 20 minutes. Cool sponges on wire rack. Spread the sponges with jam, and whipped cream, with icing sugar added. Place strawberries on top. Sandwich the sponges together and dust liberally with icing sugar.

4 eggs, separated

3/4 cup caster sugar

1/2 cup custard powder

4 dsp cornflour

1 tsp plain flour



1 tsp cream of tartar

1/2 tsp bicarbon- ate of soda

Topping

small jar of strawberry jam

300ml whipping cream

3 tbsp icing sugar

2 punnets strawberries, trimmed, sliced

icing sugar to dust
