VALENTINE'S RECIPE: Oysters with Champagne Sauce

Serves 2 to 4

2 dozen freshly shucked oysters in shell
30g butter
3 shallots, finely chopped
1 cup champagne or sparkling white wine
1/2 cup pouring cream
salt and freshly ground black pepper to taste

1 bunch chives, finely chopped

Melt the butter in a small saucepan and cook the shallots for a few minutes until soft, then add the champagne. Bring to the boil and simmer for about 10 minutes to reduce liquid by half.

Add the cream, season and add half the chives. Simmer for 5 minutes. Place the oysters on a grill tray, spoon over the sauce and grill for a few minutes to brown just slightly. Then scatter over remaining chives.
