Spanish Chicken Open Pie with Potato Chips

Serves: 4

Ingredients:
1kg tomatoes, chopped
1 tablespoon olive oil
1 brown onion, chopped finely
3 cloves garlic, chopped finely
1 long red chilli, chopped finely
600g chicken thigh fillets, cut into 2cm pieces
1 tablespoon Cajun spice
1 teaspoon paprika
250g button mushrooms
100g pitted olives, chopped
100g green beans, halved
1 tablespoon red wine vinegar
2 sheets frozen puff pastry
4 vine ripened tomatoes
1 tablespoon olive oil, extra
1 desiree potato, extra
vegetable oil, for deep frying
1 tablespoon shredded basil
Olives and basil, to garnish
mashed potato
4 desiree potatoes
60ml milk
1 teaspoon butter
1 tablespoon finely chopped parsley

Method:
1. Preheat oven to 200C.
2. Using a sharp knife, cut a shallow cross in base of tomatoes. Place in a large heatproof bowl. Cover with boiling water. Stand 2 minutes. Drain. Rinse under cold water. Peel away skins. Cut into 1cm pieces.
3. Heat oil in a large frying pan. Cook onion, garlic and chilli until onion is soft. Stir in chicken, spice and paprika. Add tomatoes, mushrooms, olives, and beans. Bring to a boil. Simmer until thickened. Stir in vinegar. Season.
4. To make mash, place potatoes in a saucepan of cold water. Bring to a boil. Boil gently until tender. Drain. Mash with milk and butter. Season. Stir in parsley.
5. Cut pastry sheets into four squares. Place on an oven tray lined with baking paper. Top with another oven tray (this will prevent pastry rising, giving a thin, crisp result).
6. Cook for about 15 minutes or until golden and crisp.
7. Place vine tomatoes in a baking dish. Drizzle with extra oil. Season. Roast for 20 minutes or until soft.
8. Thinly slice extra potato on a mandolin. Pat dry with absorbent paper. Deep fry until golden. Drain on absorbent paper. Season.
9. To assemble, spread mashed potato over half the pastry squares. Top with chicken mixture, shredded basil and remaining pastry squares. Serve with roasted tomatoes and potato chips. Garnish with olives and basil.
