Gingered golden syrup dumplings

Put all the syrup ingredients in a wide pan and bring to the boil then immediately drop to a simmer. For the dumplings, sift the flour and ground ginger into a mixing bowl. Rub in the butter, then add the egg, milk and zest. Lightly mix — don’t overmix or the dumplings will be leaden. Press one tablespoon of mix into a ball and when you have 12, drop them into the simmering syrup. Simmer, covered for 10 minutes. The dumplings are cooked when an inserted skewer comes out clean. Serve the dumplings and syrup with chopped glace ginger and ice-cream.

1 1/2 cups water

3/4 cup golden syrup

3/4 cup brown sugar

1 tbsp lemon juice

1 1/2 tbsp butter

500ml water

Dumplings

1 cup self-raising flour

1 tsp ground ginger

1 tbsp butter

1 egg, whisked

2-3 tbsp milk

1 tbsp lemon zest

glace ginger to serve
