Panko crumbed whiting fillets with smoked paprika

Serves 4

12 whiting fillets

1/4 cup flour

2 eggs, lightly beaten

1/2 cup panko breadcrumbs

1 tsp sweet, smoked paprika

pinch sea salt

1/4 cup sunflower oil

1/2 cup whole-egg mayo

6 anchovy fillets, finely chopped

squeeze lemon juice


Remove any tiny bones from whiting. Dust in flour, then egg and then breadcrumbs mixed with paprika and salt. Place in fridge for 15 minutes to set crumbs. Heat oil in frying pan to high heat. Add fillets and cook for about a minute on each side until golden and crisp. Combine mayo, anchovies and lemon juice. Serve with whiting.
