Watermelon gazpacho in mini cups
Makes about 1 litre
500g seedless watermelon
400g green melon
squeeze lemon juice
1 small garlic clove, chopped
1/4 big red chilli, seeded and chopped
2 tbsp extra virgin olive oil
pinch sea salt
mini watermelon pieces for garnish
Blend all the ingredients. Pour into a jug and refrigerate. To serve, pour into mini glasses or cups. Skewer the watermelon pieces and place on top.
