While British-born Eaglesfield’s international experience (including stints in London, the French Alps and the Mediterranean) inspires the colours and flavours of his dishes, he also focuses on local flavours.
“Manuka trees grow on the lower hillsides – we use the wood for smoking our duck and the ash for curing our salmon. On my commute to work along a lakeside path I collect wild marjoram to season our Parmesan Churros,” Will explains.
