Granola - a crunchy start to the day

Preheat oven to 165C. Put two cups of the whole nuts in a food processor. Set the third cup aside. Process the nuts into medium-size crumbs. Transfer to a big bowl. Add the remaining nuts, figs, apricots, berries, pepitas and coconut. In a small bowl combine the maple syrup, vanilla essence and coconut oil. Stir through the nut mixture. Fold through the mandarin zest and pour on to a greased oven tray. Cook for 45 minutes, stirring every 15 minutes. Remove and let it cool completely. Add the chia seeds and store in an airtight container.

3 cups mixed nuts, almonds, hazelnuts, macadamias, Brazil

1/3 cup dried figs, finely chopped

1/3 cup dried apricots, finely chopped

1/3 cup dried berries

1/4 cup goji berries

1/2 cup pepitas

1/2 cup coconut flakes

2 tbsp maple syrup

1 tsp vanilla essence

1 tbsp coconut oil

1 mandarin, zest only

2 tbsp chia seeds
