Fish in a bag

Preheat the oven to 200C. Tear off six large squares of baking paper. Place a handful of spinach in the centre of each square. Top the spinach with a fish fillet, lemon slices, dill, capers, scallops and butter. Seal up the square, as you would fold the seam of a pastie. Place them all on a large baking tray and cook for 10 minutes. Stand 5 minutes and serve the bags on a plate, with each recipient opening theirs at the table.

6 handfuls spinach

6 thick white fish fillets like Rankin cod

2 lemons, sliced

1/2 cup dill

3 tbsp capers

18 scallops

6 tbsp butter
