Tuck trucks deliver taste

Eating out has never been easier as food vans deliver exotic meals on the go. Busselton-based Sathish Kumar's Spice Odysee is on the road five days a week with everybody's Indian favourites, such as beef vindaloo, lamb korma and pumpkin and spinach dhal with rice and pappadums at Busselton Rotary Park, Margaret River Rotary Park and the old Dunsborough boat ramp.

"The butter chicken would have to be the most popular," he said. "Kids love it, adults love it and the chilli can be adjusted to suit any taste. Nothing comes out of a jar and everything is made from scratch using local ingredients."

Mr Kumar worked as a chef down south before going out on his own four years ago.

"I wanted to do something different but couldn't afford a restaurant, so this was the next best thing," he said. "There are no compromises with what I do. All food is made to traditional recipes."

At Mezcal Food Truck & Catering it's about Mexican street food for a healthy treat with menu items listed on a blackboard at every stop: Pulled pork and slow-roasted lamb tacos, beef enchiladas, pineapple ice-cream sandwiches and chilli fries with sour cream.

"The big fave would be the taquitos made with slow-cooked spicy meat with black beans and cheese wrapped in a corn tortilla served with three sauces and jalapeno slaw," owner-chef Mackenzie "Mac" Corrigan said.

"A lot of people don't know what half the menu items are but we have photos with descriptions and one of the girls usually explains."

She fell in love with Mexican food on her travels and is a regular at the old Dunsborough boat ramp and Slippery Rocks carpark, in Yallingup.

"We have been told that our customers like how healthy and different Mexican food is," she said. "We have a regular menu and different specials every night that I put up on Facebook, Instagram and display on the truck."
