Chocolate mousse

1 per person

1 avocado

1 tbsp dutched cocoa

2 tbsp rice malt syrup

1 tsp stevia powder if you have a sweet tooth

1 tsp vanilla essence or a few drops of mint extract

Scoop out the avocado flesh and place in a food processor with the remaining ingredients. Blitz until the mixture is smooth and creamy. Spoon or pipe into a serving dish.
