Whole beef rib with sticky bourbon glaze

Serves: 4

1/4 cup Wild Turkey bourbon whisky

1/2 cup tomato sauce

1/4 cup honey

2 tbsp soy sauce

2 tbsp vinegar

1 tbsp brown sugar

1 tsp powdered mustard

1 tsp crushed pepperberries (from any good grocer but, if unavailable, use black peppercorns) * *1kg whole beef rib racks


In a bowl, mix together Wild Turkey, tomato sauce honey, soy sauce, vinegar, sugar, mustard and pepperberries. Add the whole ribs and set aside for an hour or two. Place the rib racks on an oven tray lined with greaseproof paper and covered with foil (keep remainder of the sauce) in an oven preheated to 180C for 2 hours or until the meat is cooked and soft. Remove foil from tray and brush the ribs with remainder of the sauce and bake uncovered in oven for 10-15 minutes and serve.
