Lime puddings

Makes about 6

70g butter, melted

200g sugar

3 egg yolks, keep whites

3/4 cup milk

2 heaped tbsp self-raising flour

2 tsp grated lime zest

2 tbsp lime juice

Greek yoghurt to serve

icing sugar to serve

Beat the butter and sugar until creamy, then whisk in the egg yolks. Fold through the milk, flour, zest and juice. Beat the egg whites until stiff peaks form. Gently fold through mixture. Spoon into jars almost to the top. Place in a baking dish. Add water to come halfway up sides of jars. Bake at 180C for about 40 minutes until puffed and golden. Dust with icing sugar and serve with yoghurt.
