Quinoa rice paper roll

Serves 2

8 rice paper sheets

8 mint leaves

2 cups cooked quinoa

1 sweet potato roasted, cut into batons

1 avocado, sliced

2 cups shredded lettuce

sweet chilli sauce

Dip a rice paper sheet into warm water and then wipe dry with a clean tea towel. Place a mint leaf in the centre of the sheet. Spoon a quarter of a cup of quinoa over the top. Down the centre of the grains, lay a baton of sweet potato, a couple of slices of avocado and some shredded lettuce. Roll the rice paper up into a cylinder, tucking in the ends as you go. Serve with sweet chilli sauce.
