Chilli and garlic prawns

  • Serves 4 *

  • 1 whole preserved lemon *

  • 60g garlic *

  • 2 medium chillies, de-seeded *

  • 100g butter, softened *

  • olive oil *

  • 12 prawn cutlets, shelled, *

  • cleaned *

  • 50ml white wine *

  • handful parsley, chopped *

  • salt and pepper *

  • _Sauce calypso _ *

  • 200ml mayonnaise or aioli *

  • juice of 1 lime *

  • 15ml Tabasco sauce *

  • 50ml tomato sauce *

  • salt and pepper *

In a food processor, place lemon, garlic, chilli and butter and blitz for a minute or until combined well. Set aside. Heat pan to medium hot with a little olive oil and gently sear the prawns either side until golden brown. Deglaze with white wine. Stir through garlic butter, parsley and seasoning over low heat. To make sauce calypso, combine ingredients in a bowl. Enjoy prawns served with lemon and sauce calypso.
