Indonesian spiced honey cake

Makes a 24cm spring-form tin

2 cups plain flour

2 cups brown sugar

1 tbsp mixed spice

2 tsp baking powder

180g butter, melted

1 tsp bicarbonate soda

1 egg

2 tsp nutmeg

1 cup milk

Pre-heat oven to 180C. Line the cake tin with a little melted butter and baking paper on the base. Combine flour, sugar, mixed spice, baking powder and butter until it resembles fine breadcrumbs. Press half the mix into the base of the cake tin and set aside. Mix the remaining ingredients with the bicarb soda, egg, nutmeg and milk. Pour the batter on top of prepared base and bake at in the oven for 1 hour. Check the cake with a skewer. The skewer should come out clean if the cake is cooked. Serve the cake with generous lashings of fresh honey, seasonal berries and ice-cream of your choice.
