Parmesan crusted chicken skewers
Makes about 10
3 tbsp freshly grated parmesan
3 tbsp grated cheddar cheese
2 tbsp chopped fresh basil leaves
2 eggs, lightly beaten
3 skinless chicken thighs, cut into 3-4 strips
10 cos lettuce leaves
10 cherry tomatoes
Combine the cheeses and basil in one bowl. Place the eggs in another bowl. Dip the chicken strips into the egg and then the cheese mixture. Refrigerate for an hour to help set the coating. Bake at 180C for about 12 minutes until golden. Place on a skewer if desired. Then place in a cos lettuce leaf with a cherry tomato.
