Turkey burger with grilled pineapple

Serves 6

500g turkey mince

1/2 cup grated carrot

1/2 cup grated onion

2 cloves garlic, crushed

1 tbsp soy sauce

1 tsp sriracha, plus extra

6 pineapple slices

1 can beetroot slices

1 iceberg lettuce

6 burger buns

Gently combine the turkey with grated carrot, onions, garlic, soy sauce and sriracha sauce. Form into six equal-sized patties. Heat the barbecue. When hot, spray lightly with oil. Place the patties on the grill and cook on high heat for about 5-7 minutes on each side. While the burgers are cooking, grill the pineapple slices for 2-3 minutes on each side. To serve, place a piece of lettuce on the bottom of each burger bun. Top with the cooked burger and, then top with grilled pineapple, sliced beetroot and a squirt of sriracha. Top with lid and enjoy.
