Simple Thai salad

Serves 8 as a side dish

1/2 red cabbage, shredded

2 big carrots cut into thin strips

1/2 white radish, cut into thin strips

3 tbsp coriander leaves

3 tbsp mint leaves, chopped

2 cups bean sprouts

120g snow peas, cut into thin strips

200g unsalted peanuts, chopped

Dressing

2 garlic cloves, finely chopped

1/4 cup rice wine vinegar

2 tbsp fish sauce

1 tbsp palm sugar, grated.

1 lime, juice

1 big red chilli, finely chopped


Combine salad ingredients. Combine dressing ingredients. Toss half the dressing through the salad. Refrigerate until ready to use. Taste salad and add remaining dressing if desired.
