  • Serves 4-6 *

  • 2 medium orange sweet potatoes, *

  • peeled, cut into chunks *

  • 2 big red onions, peeled, cut *

  • into wedges *

  • 1/2 preserved lemon, use skin only, *

  • cut into thin strips *

  • 4 bratwurst sausages, cut into chunks *

  • 3 garlic cloves, finely chopped *

  • salt and black pepper *


  • 1-2 tbsp extra virgin olive oil *

  • 1-2 tbsp honey *

  • 2 tbsp fresh rosemary leaves *

  • 1 x 400g can cannellini beans, *

  • drained *

Place sweet potato, onions, preserved lemon, sausage and garlic in a baking dish. Season then drizzle oil and honey over the top. Sprinkle over rosemary leaves. Bake at 180C for about 40 minutes. Remove from oven and stir through cannellini beans.
