  • 2 bunches broccolini (approx. 500g) *

  • 150g flaked almonds *

  • 200g fetta, crumbled *

  • salt and freshly ground black pepper *

  • butter *

  • 3 tbsp white wine or juice *

  • of half a lemon *

Trim the ends off the broccolini and steam for about 2-3 minutes until bright green but still crisp. Refresh under cold water and drain well. Spread the flaked almonds on a baking tray. Place in a pre-heated moderate oven (180C) and roast until lightly browned, shaking frequently. Layer the broccolini with the flaked almonds and fetta in an oven-proof serving dish. Season with salt and freshly ground black pepper, dot with butter and pour over the wine or lemon juice. Bake in pre-heated moderate oven (180C) for about 15 minutes.
