My sister Jo makes these every year for family and friends, who can't get enough of them. It just wouldn't be Christmas without them.

RECIPE: Drunken Prunes
Makes: 4 jars (400-500ml)

1kg pitted prunes
2 cups (500ml) black tea, hot
1 lemon, rind only, finely sliced
1 orange, rind only, finely sliced
dozen cloves
300g caster sugar
700ml (approx.) port

Put prunes in a clean bowl, pour over hot tea and cover with tea towel and leave overnight to swell. Drain and reserve liquid from prunes into a saucepan. Mix prunes, rinds and cloves together and divide evenly into clean and sterilised jars and set aside. Add sugar to tea and bring to boil. Boil for 3-4 minutes and remove from heat. Pour over prunes, evenly between each jar. Top up jars with port and seal. Allow to stew for a couple of weeks before serving with ice-cream.
