RECIPE: Trio of Crostini

Crostini are a great little snack or aperitivo to have with drinks.

If you like buffalo mozzarella, look out for burrata, which is similar but made with cream. When you break it open, it has a beautiful gooey middle. Yum.

RECIPE: Trio of Crostini
Serves 4

1 loaf ciabatta bread, sliced
1 clove garlic, peeled
olive oil

Combination 1:
broad beans, blanched, podded
pecorino cheese, grated

Combination 2:
brescaola, thinly sliced
parmesan, shaved

Combination 3:
buffalo mozzarella or burrata
chilli, finely diced

Crush the blanched broad beans in a mortar and pestle, add the grated pecorino and some olive oil to make a chunky spread. Toast the slices of ciabatta on a barbecue or griddle pan and rub with the garlic clove. Drizzle with olive oil and top with your favourite toppings. Season with salt and pepper.
