One of the winning recipes from last year's IGA Perth Royal Show.

RECIPE: Biberfladen

1 cup cream
1 cup sugar
3 tbsp honey
1 tsp mixed spice
1 tsp cinnamon
2 cup flour
1/2 tsp baking powder
100g marzipan (optional) or 1 cup chopped dates
2-3 tbsp icing sugar for glaze
2 tbsp lemon juice for glaze

Half beat the cream. Stir in sugar, honey, mixed spice and cinnamon. Add flour and baking powder. If you are using dates instead of marzipan, add them to the mixture. Pour half of the mixture into a greased baking tin. If you are using marzipan, roll it out flat and place over the top of the mix, then spoon the rest of the cake batter on top of the marzipan. Bake for about 40 minutes in a moderate (180C) oven. Glaze with a syrup of icing sugar dissolved in lemon juice, while cake still hot, so cake can be seen through glaze.
