RECIPE: Pikelets

One of the winning recipes from last year's IGA Perth Royal Show.

RECIPE: Pikelets

1 egg
200ml milk
100ml cream
2 tsp melted butter
3 tbsp sugar
1 cup self-raising flour, sifted
1/2 tsp bicarb soda

Beat the egg. Add milk, cream and butter. Beat well. Add sugar, flour and bicarb soda. Beat well so batter is smooth. Drop spoonfuls of mixture on to a reasonably hot frying pan. Flip once bubbles form and the edges look round. Each pikelet should be a golden brown colour. Brown on the other side then serve hot.
