RECIPE: Spiced Strawberry Jam

2kg strawberries
1.5kg raw sugar
4 oranges, unwaxed
2 sticks cinnamon
6 cloves
muslin bag
175ml lemon juice

Wash and top the berries. Place in a bowl and sprinkle with half the sugar. Cover bowl and leave overnight. Remove the zest from the oranges and then juice them. Tie the spices in muslin and put bag, zest and juice, with a little water to cover, in a preserving pan. Simmer until the zest is really tender then remove the bag. Add strawberries and lemon juice, stir in remaining sugar until dissolved then boil rapidly until thick. Bottle into hot, sterile jars and seal.
