How do you get any more authentic than the current Mexican wave Perth has been riding of late?

Have a couple of authentic Mexicans run it. Chefs Gianfranco "Gianni" Monti (formerly of Star Anise, Restaurant Amuse and La Cholita) has teamed up with Israel Ochoa to open Casa Mexicana - El Compa in Northbridge.

"We started about a month ago now, and it's going really well," Monti says.

"It's traditional Mexican and as authentic as we could make it. Both myself and my business partner are Mexican, and we're trying to keep it as simple as we know it.

"We're both front-of-house and kitchen trained, so we can swap around as needed. So it's very versatile. And we've just hired a Peruvian head chef, which means we'll be able to spend a little more time on the floor talking to people.

"The reaction has been really good so far, considering we've only been open four weeks and we haven't done any advertising."

Casa Mexicana - El Compa is open from Tuesday to Saturday from 6pm. Plans are underway to open for lunch, and it is fully licensed.
