It may look like the world's most enjoyable job but for those in the know, this is serious work.
As Perth Royal Show's chief chocolate judge, Roy Southworth has to taste every piece in the dairy competition.
The continental pastry chef and Polytechnic West lecturer spent hours smelling, snapping and devouring more than 60 samples yesterday to decide which chocolate blocks, truffles and novelty creations were the best of the best.
With fellow judge Simon Aston, he tested taste, looks, aroma, structure and innovation.
"We are looking for a nice, shiny chocolate with a good, clean finish and a compact structure that gives a nice snap when you break it," he said.
"We go home with raging headaches but with a really good taste of what's out there and some new ideas."
Between samples, the judges sip black tea to remove any trace of chocolate.
Dairy chief judge Russell Smith said the process might seem enviable but was hard work. "The level of concentration is extreme throughout the whole day," he said.
The dairy competition has about 340 entries. Winners will be announced next week.
