Chef ready to dish it up to top surfers

A couple of years ago it was all about soy milk.

Then last year it was out with the soy and in with the trucks full of almond milk.

For all Russell Blaikie knows, it will be something different again. With three weeks before the Drug Aware Margaret River Pro, Blaikie is preparing for the whims of the world's best surfers, including how they like their coffee.

For the second year running, the Perth chef and surfing tragic will oversee the food for VIPs and professional surfers at the elite event, which starts on April 15.

Despite the onerous sounding nature of the job, he said it would barely feel like work.

"I get the best kitchen in the world looking directly over the main break in Margaret River," Blaikie said.

Blaikie, 51, who owns the Must restaurants in Highgate and Margaret River said the event was a rare chance to showcase the best food and wine from the region.
