Hot Cross Cookies

Ingredients

Cookies
2/3 cup or 125g light olive oil
3/4 cup or 130g raw caster sugar
1/2 tsp vanilla extract
1 tsp orange zest
1 egg
1 3/4 cups or 230G plain gluten free flour
1 tsp cinnamon
1/2 tsp all spice
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 cups raisins

Royal Icing
150g pure icing sugar, sifted
1/2 egg white
1 tsp lemon juice

Method

1. Preheat oven to 190C. Line a baking tray with baking paper.
2. Add oil, sugar, vanilla, orange zest and egg to a mixing bowl and beat to combine.
3. Add dry ingredients and beat to combine. Fold in raisins.
4. Roll dough into small balls, flatten with palms of hands and place on a baking tray.
5. Bake for 12-15 minutes or until golden. Cool completely.
6. To make the royal icing beat the egg white, icing sugar and lemon juice together to form a paste. If icing is too runny add more icing sugar. Place icing in piping bag and pipe crosses over cookies.
