'Make Me Crumble' (Apple Crumble)

6 granny smith apples, peeled, cored, cut into 2cm pieces
1 cup caster sugar
½ lemon, juiced
1 ½ tsp ground cinnamon
1 tsp vanilla bean extract
1 cup plain flour
1 cup rolled oats
½ cup almond meal
200g unsalted butter, melted
Vanilla ice-cream or double cream, to serve

Method
1. Preheat oven to 180C. Place apple, 1/2 cup sugar, lemon juice, 1/2 tsp cinnamon and vanilla in a large pot over medium heat and cook, stirring occasionally, for 5 minutes or until sugar has dissolved and apple has softened a little.
2. To make crumble topping, combine flour, remaining 1/2 cup sugar, 1 tsp cinnamon, oats, almond meal and butter in a large bowl.
3. Transfer apple mixture to a 1.5L-capacity ovenproof dish, then spoon over crumble mixture.
4. Bake for 40–45 minutes, or until crumble is golden and apples are soft. Serve with vanilla ice-cream or double cream.
