RECIPE: Baked Custard

After being diagnosed with chronic fatigue, Christine Cronau researched the issues surrounding her health.

She is now a second Dan black belt in Rhee Tae Kwon Do and has "loads of energy". She has also written a cookbook, Great Health is a Piece of Cake, based on 10 years of research on nutrition.

Ms Cronau touts the book as an expose about dietary truths that have been ignored in the food industry.

Throughout the pages are simple recipes for dishes such as apple pie, corn chips, sushi, roast turkey and mayonnaise.

Here is one of her recipes:

RECIPE: BAKED CUSTARD
Preparation time: 10 minutes
Baking time: 30 minutes

Serves 8

Ingredients:
600ml thin, pure cream
3 eggs
1 tbsp vanilla extract
1/8 tsp stevia (a sweet plant)

Nutmeg, ground or freshly grated

Instructions: Preheat oven to 120C. Mix all the ingredients together with a whisk (don't beat it, but stir well).

Place some water in a large baking dish (approximately half full). Pour mixture into ramekins, sprinkle with nutmeg, and place ramekins into the water.

Bake for about 30 minutes, until the custard puffs slightly. Watch the custard carefully; if they are in the oven for too long, the custard will separate a little. Cool them in the refrigerator until set (1 to 2 hours).
