Mum reveals secret to making 62 meals for less than $100

A New Zealand mother has worked her magic in the kitchen, turning just $100 NZD or $95 AUD into 62 meals for her family.

Kathrine Lynch, a blogger from Hamilton, had set herself a challenge to see what she could make with the amount, and claims the finished product will provide her family dinner for three weeks.

"For our family, 2 adults and 2 young children this has worked out as $4.86 per dinner. So this $100 worth will last us 3 full weeks of dinners," she wrote on Facebook.

According to the New Zealand Herald the children, one and three years old, share a serving and while each parent has a serving.

The mother's post about the challenge was added to the Facebook page Busy Happy Kids NZ and sparked the interest of her followers, receiving more than 1000 comments in just a couple of days.

Along with the post she added an image of the ingredients and underneath was a picture of the containers holding the meals.

According to the New Zealand Herald, Ms Lynch stuck to the guidelines about portion sizes set out by the Heart Foundation.

On the menu was a number of dishes including roast chicken, spaghetti bolognaise and chicken and rice risotto.

"I just figured out it's going to cost $30 for our family - two adults and two kids - to have a takeaway meal and for me that's quite a substantial amount of money for one meal when I can buy at Pak n' Save two chickens for $14. So $28 and four chickens and I knew how far I could make that go. So I decided to see how much I could make for $100," she told the publication.

She reportedly said buying in bulk and purchasing items on special was paramount to keep costs low.

Ms Lynch added: "The meat is the most expensive part of all of the meals so it's just learning different ways that you can make the meat stretch."

Following the positive response from her followers she uploaded three out of the six recipes she used for the challenge online.

Ms Lynch has since told her followers that she will post the other three recipes shortly as well.
