1 cup raspberries (frozen is fine)
1/2 cup pomegranate juice (sugar free, I used Bickfords)
1/3 cup chia seeds
pomegranate seeds to serve
Mash the raspberries and stir in the pomegranate juice, before stirring through the chia seeds. Wait 10 minutes and give the mixture another stir. This will prevent the seeds from sinking and the mixture separating. Chill in the fridge overnight and serve sprinkled with pomegranate seeds.
