Recipe: Caramel Ice-Cream Sandwich

Make the ice-cream in advance and you will have this restaurant-style dessert whipped up in a matter of minutes.

RECIPE: Caramel Ice-Cream Sandwich
300g caster sugar
125ml water
500ml milk
500ml cream
12 egg yolks
2 packets syrup waffles or stroopies

Place 200g of the sugar and water in a pot and place over a moderate heat until the sugar has dissolved. Bring to a simmer and cook until a dark golden colour.

Immediately remove from the heat. Carefully stir in the milk and cream, and put back on the stove to keep it warm.

In a bowl whisk the egg yolks and the remaining sugar together then whisk in the milk mixture and return it to the stove in a clean saucepan. Using a wooden spoon stir until it thickens. Strain through a fine sieve. Chill in the fridge, then freeze following your ice-cream maker instructions.

Sandwich the ice-cream between two syrup waffles and sprinkle with icing sugar.
