One of the winning recipes from last year's IGA Perth Royal Show.
RECIPE: Pikelets1 egg
2 tsp melted butter
3 tbsp sugar
1 cup self-raising flour, sifted
1/2 tsp bicarb sodaBeat the egg. Add milk, cream and butter. Beat well. Add sugar, flour and bicarb soda. Beat well so batter is smooth. Drop spoonfuls of mixture on to a reasonably hot frying pan. Flip once bubbles form and the edges look round. Each pikelet should be a golden brown colour. Brown on the other side then serve hot.
