VALENTINE RECIPE: Chilled Avocado Soup & Prawns

Serves 4-6

1 garlic clove, peeled
1/2 big red chilli, seeded
flesh of 3 big ripe avocados
2 tsp lemon juice
pinch sea salt
pinch white pepper
250ml full-cream milk
250ml chicken stock
12 big cooked prawns, peeled with tails intact
fresh mint leaves, for garnish

good-quality extra virgin olive oil, for drizzling

Combine all ingredients, down to and including chicken stock, in a food processor or blender. Process until smooth. Soup should be quite thick and creamy. Place in small bowls and top with two or three prawns. Garnish with fresh mint. Drizzle over a little olive oil.
