RECIPE: Gina's Hair-Raising Honey Cake

Serves 12

25g (1/4 cup) dry breadcrumbs

375ml (11/2 cups) hot tap water

DRY MIXTURE:
225g (11/2 cups) plain flour
225g (11/2 cups) self-raising flour
11/2 teaspoons bicarbonate of soda

40g (1/4 cup) cocoa powder

WET MIXTURE:
4 eggs
345g (11/2 cups) caster sugar
185ml (3/4 cup) vegetable oil
500g honey

dash of vanilla extract

Preheat the oven to 180C. Grease a 27cm ring cake tin and sprinkle the base and side of the tin with breadcrumbs, tipping out any excess. It is best to use a tin without a removable base, as the mixture is liquid and may leak.

For the dry mixture, sift the dry ingredients together into a bowl. For the wet mixture, in a separate large bowl (or electric mixer bowl), mix the wet ingredients together until well combined.

Mix the dry mixture into the wet mixture, alternating with the hot water. Pour into the prepared cake tin. Bake for 1 hour, or until a skewer inserted in the cake comes out clean. Allow the cake to cool before turning out of the tin.
