Thai Pork & Sweet Potato Curry

This curry freezes well.

RECIPE: Thai Pork & Sweet Potato Curry

Serves 6

1 tbsp sunflower oil
3 garlic cloves, finely chopped
1 tbsp freshly grated ginger
1 tbsp Thai red curry paste
1 medium orange sweet potato, peeled, cut into chunks
2 pork fillets (approx. 800g), cut into chunks
400g coconut cream
1 cup chicken stock
2 tsp sugar
2 tbsp fish sauce

3 tbsp fresh coriander, roughly chopped extra coriander leaves for garnish

Heat the oil in a big pot. Cook the garlic and ginger for a minute to soften. Add the curry paste and cook for a few minutes until fragrant. Add the potato and pork, combining well. Cook stirring for a minute. Add the remaining ingredients, stir, and then simmer for about 15 minutes. Serve with rice and garnish with extra coriander.
