It's as easy as 1-2-3 and will take you about 20-30 minutes and, best of all, it's heavenly. I can guarantee you will make them again and again.

BAKING PAPER: Apple & Pear FrittersServes: 4-6
400-500ml vegetable oil2 firm pears - cores removed and sliced 5mm thick
Cinnamon sugar:1 tsp ground cinnamon
Start off by slowly heating oil in a deep saucepan over a medium heat. Next, make your batter. In a clean bowl, whisk together flour, sugar, eggs, milk and vanilla into smooth mixture and set aside. Then combine sugar and cinnamon in a separate bowl and set aside. Now all the components are ready to start making the fritters.
Check your oil is hot enough by dropping a small teaspoon of batter into oil. If it rises to the top and starts to become golden, the oil's hot enough. Make the fritters in batches of 3-4 pieces of fruit. Dip fruit in batter and then gently drop into oil. Deep-fry for 2-4 minutes or until golden. Remove from oil and place on paper towel to soak up any excess oil. Transfer to the bowl of cinnamon sugar and toss until fritters are covered. Serve immediately with ice-cream and for real decadence, chocolate sauce.
