VALENTINE RECIPE: Chocolate, Coffee & Macadamia Nut Slice with Frozen Grapes

Frozen grapes are delicious and cooling with this rich chocolate dessert.

Chocolate, Coffee & Macadamia Nut Slice with Frozen Grapes

Makes about 12 slices

200g good quality dark chocolate
100g unsalted butter
1 tbsp freshly ground coffee beans
2 tbsp muscat or port
100g macadamia nuts, finely chopped
150g raisins
2 tbsp icing sugar
200g sponge finger biscuits, finely chopped
150ml thickened cream

big bunch of red grapes, frozen

Melt the chocolate and butter together in a saucepan over low heat. Add the ground coffee to combine well. Pour into a bowl and stir in remaining ingredients except grapes.

Line a loaf tin about 20cm x 11cm with cling film with edges overhanging.

Spoon the mixture into the loaf tin. Smooth the top and cover tightly with cling wrap. Refrigerate overnight. Unmould and cut into slices and serve with a small bunch frozen grapes.
