RECIPE: Farmers' Market Pizza

Little Caesars king Theo Kalogeracos shares some of his favourite pizza recipes from his second cookbook, Theo & Co. Take 2.

RECIPE: Farmers' Market Pizza

1 x 200g wholemeal dough ball - rolled and proved
90g mozzarella, grated
1/2 cup of roasted butternut pumpkin
1/2 cup roasted red capsicum
1/2 cup marinated zucchini
1/2 cup oven roasted beetroot
2 tbsp Greek yoghurt mixed with fresh chopped chives

squeeze of lemon juice

Pre-heat oven to 250C. Sprinkle the mozzarella evenly around the pizza base. Place the pumpkin, capsicum, zucchini and beetroot on top, making sure that when the pizza is cut, everybody gets a taste of each of the vegetables. Cook for 10 to 15 minutes and when ready, cut up and drizzle Greek yoghurt and lemon juice on to each slice.
