- 2 medium orange sweet potatoes, *
- peeled, cut into chunks *
- 2 big red onions, peeled, cut *
- 1/2 preserved lemon, use skin only, *
- 4 bratwurst sausages, cut into chunks *
- 3 garlic cloves, finely chopped *
- 1-2 tbsp extra virgin olive oil *
- 2 tbsp fresh rosemary leaves *
- 1 x 400g can cannellini beans, *
Place sweet potato, onions, preserved lemon, sausage and garlic in a baking dish. Season then drizzle oil and honey over the top. Sprinkle over rosemary leaves. Bake at 180C for about 40 minutes. Remove from oven and stir through cannellini beans.
