Makes 2 litres
2x1-litre glass bottles
6 stalks lemongrass, cleaned, cut in half or quarters
40g raw caster sugar
2 litres (approx.) water, boilingIn a jug combine lemongrass, sugar and boiling water, and allow to stand and cool overnight. Divide lemongrass stalks between glass bottles, fill with cooled liquid and seal. To serve mix with pure apple juice, according to taste - 50/50 works best. Top with slices of lemon and ice cubes.
