Remove dough from fridge; roll out between two sheets of baking paper until 3-5mm thick. Cut into desired shape and pop on to tray and bake for 12-20 minutes or until cooked (cooking time will vary with size of biscuits). For icing, beat together egg whites, icing sugar and lemon juice for approx 4-5 minutes until pure white and thickened. Divide mixture in half and colour one half with a couple of drops of blue food colouring. Keep icing covered until using as it will set.
