RECIPE: Ice-Cream Christmas Pudding

Rather have something cool and refreshing? Then this pudding is for you.

RECIPE: Ice-Cream Christmas Pudding

Serves 4-6

1 litre good quality vanilla ice-cream, softened
350g homemade fruit mince mix

very good dash of Baileys

Line individual moulds with cling wrap and set aside. In a clean bowl mix all ingredients together until combined. Spoon into moulds, wrapping cling wrap over top and pop into freezer until ready to serve. Sever with candied cumquats or fresh berries.
