It’s been a long time coming, but David Coomer’s new Spanish deli Xarcuteria is finally open for business.
The deli is owned by Coomer, his wife Kareen and their business partners Anna Campos and Adam Willie.
“Several trips to Spain first gave me the idea for the deli,” Coomer said.
“Everywhere we went there were little charcuterie shops and I thought it would be a wonderful idea for Perth. I guess what I found intriguing was that they were like an old-fashioned general store, with little bits of everything.”
The deli will specialise in Spanish smallgoods, jamon, terrines, paellas and pates. They are also making their own chorizo, which is already a hit at Coomer’s restaurant Pata Negra.
“We’ve found a fantastic free-range pork grower in Boyup Brook called Killara. So our smallgoods guy is making chorizo for us and doing four variations of sausages, including a semi-cured chorizo which is made for slicing up and barbecuing. We’re also doing a couple of fully cured ones to slice and eat and a Catalan sausage called ‘fuet’, which is a skinny, long pork salami.
